Homemade Ice Cream Base

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1-2 teaspoons extract or flavoring (such as vanilla, peppermint, almond, etc.)
  • 1 cup mix-ins (such as chocolate chips, fruit, nuts, etc.)
  • Pinch of salt
  • Optional: Food coloring to match the flavor

Preparations

  1. In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Cook over medium heat, stirring occasionally until the sugar is dissolved, about 5 minutes.
  2. Remove the saucepan from heat and stir in the extract or flavoring and food coloring if using.
  3. Pour the mixture into a large bowl and let it cool to room temperature. Cover and refrigerate for at least 2 hours or overnight for best results.
  4. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. About 5 minutes before the churning is complete, add the mix-ins.
  6. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
  7. Scoop and serve, garnished with additional toppings if desired.

Tips

  • For a stronger flavor, add an extra teaspoon of extract or flavoring.
  • Mix-ins can include anything from chocolate chips and fruit to cookie dough and candy pieces.
