Coq au Vin

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1/2 pound bacon, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 pound mushrooms, sliced
  • 2 cups red wine
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Preparations

  1. In a large pot, heat olive oil and cook the bacon until crispy. Remove bacon and set aside.
  2. In the same pot, brown the chicken thighs on all sides. Remove and set aside.
  3. Add onion, garlic, and mushrooms to the pot; sauté until soft.
  4. Stir in wine, chicken broth, tomato paste, and thyme. Bring to a boil.
  5. Return chicken and bacon to the pot. Reduce heat and simmer for 45 minutes, or until chicken is tender.
  6. Season with salt and pepper before serving.

Tips

  • Serve over mashed potatoes or with crusty bread.
