Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1/2 pound bacon, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/2 pound mushrooms, sliced
- 2 cups red wine
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Preparations
- In a large pot, heat olive oil and cook the bacon until crispy. Remove bacon and set aside.
- In the same pot, brown the chicken thighs on all sides. Remove and set aside.
- Add onion, garlic, and mushrooms to the pot; sauté until soft.
- Stir in wine, chicken broth, tomato paste, and thyme. Bring to a boil.
- Return chicken and bacon to the pot. Reduce heat and simmer for 45 minutes, or until chicken is tender.
- Season with salt and pepper before serving.
Tips
- Serve over mashed potatoes or with crusty bread.
