Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 1 cup short-grain rice
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 2 cups chicken broth
- 1/2 cup white wine
- 1 chicken breast, diced
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound mussels, cleaned
- 1/2 pound chorizo, sliced
Preparations
- In a large paella pan, heat olive oil over medium heat. Add onion, bell pepper, and garlic; sauté until soft.
- Stir in rice, paprika, and saffron; cook for 1 minute.
- Add chicken broth and white wine; bring to a boil.
- Add chicken, shrimp, mussels, and chorizo. Reduce heat and simmer until rice is tender and seafood is cooked, about 20 minutes.
- Serve hot.
