Paella

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 cup short-grain rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 2 cups chicken broth
  • 1/2 cup white wine
  • 1 chicken breast, diced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels, cleaned
  • 1/2 pound chorizo, sliced

Preparations

  1. In a large paella pan, heat olive oil over medium heat. Add onion, bell pepper, and garlic; sauté until soft.
  2. Stir in rice, paprika, and saffron; cook for 1 minute.
  3. Add chicken broth and white wine; bring to a boil.
  4. Add chicken, shrimp, mussels, and chorizo. Reduce heat and simmer until rice is tender and seafood is cooked, about 20 minutes.
  5. Serve hot.

Tips

  • Garnish with lemon wedges and fresh parsley for added flavor.
