Caldo Verde

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 6 large potatoes, peeled and diced
  • 6 cups chicken broth
  • 1/2 pound chorizo, sliced
  • 1 bunch kale, chopped
  • Salt and pepper to taste

Preparations

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
  2. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Blend the soup until smooth using an immersion blender.
  4. Stir in chorizo and kale. Simmer for an additional 10 minutes.
  5. Season with salt and pepper before serving.
