Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 6 large potatoes, peeled and diced
- 6 cups chicken broth
- 1/2 pound chorizo, sliced
- 1 bunch kale, chopped
- Salt and pepper to taste
Preparations
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
- Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in chorizo and kale. Simmer for an additional 10 minutes.
- Season with salt and pepper before serving.
