Gazpacho

Gazpacho

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Chopped fresh basil for garnish

Preparations

  1. In a blender, combine tomatoes, cucumber, bell peppers, onion, and garlic. Blend until smooth.
  2. Add tomato juice, olive oil, and red wine vinegar. Blend again until well combined.
  3. Season with salt and pepper. Chill in the refrigerator for at least 2 hours.
  4. Serve cold, garnished with chopped fresh basil.

Tips

  • For a spicier version, add a pinch of cayenne pepper.
